Ingredients:
1 cup Margarine
1 ½ cup peanut butter
1 cup flour
1 tablespoon baking soda
3 eggs
¾ cup granulated sugar
1 ½ cup brown sugar or coconut sugar
1 teaspoon vanilla
125g black chocolate
1 table spoon instant coffee (nescafe)
and/or 10-20 tablespoons ABV
Preparation:
In a large bowl mix P. Butter and margarine, then the sugars with the vanilla extract until creamy, Add eggs and mix until its pudding, add baking soda, flour, coffee and optional ABV mix until blended. Preheat oven to 180F The chocolate must be broken into pieces or grinned into the mixture and lightly stirred, now your ready to bake. Grease your Pan and using two spoons “one in each hand” scoop out a nice portion on one spoon and use the other spoon to push on to pan. Cook for 5-7 minutes. Recipe is for around 24 cookies (2 batches). Let them cool before eating to avoid breaking. Bon appetite.
